Carbohydrate: Nasi Goreng

A tasty vegetarian meal, ideal for left over rice.

Serves: 4
about 25 minutes

12 oz rice
1 medium sized onion, finely chopped
1 garlic clove, minced
1 leek, finely cut
1 large red bell pepper, finely cut
1 large carrott, finely cut
7 oz fresh mushrooms, thinly sliced
1 tablespoon safflower oil
1/2 teaspoon paprika
1/4 teaspoon tumeric
1/4 teaspoon curry powder
1/4 teaspoon ginger
fresh chives, chopped for garnish

How to:
1. Cook the rice.

2. In a large deep skillet, heat the oil over medium high heat. Add all the vegetables, and fry them togehter for about 5 minutes. Stir constantly.

3. Add the cooked rice and mix with the vegetables.

4. Season with paprika, tumeric, curry powder and ginger.

5. Garnish with chives.
