Carbohydrate: Cream Cheese Veggi Sandwich

A refreshing summer sandwich.

Serves: 4
about 15 minutes

8 slices whole grain or multi-grain bread
8 tbsp cream cheese
4 tomatoes, thinly sliced
1 small cucumber, thinly sliced
4 medium sized lettuce leaves
1 small red onion, thinly sliced
paprika to taste
salt and pepper to taste

How to:
1. Toast bread.

2. Spread the cheese on all 8 bread slices, one side only.

3. On 4 toasts, layer sandwich as follows: lettuce, tomatoes, cucumber, onions. Season to taste with salt, pepper and paprika.

4. Close sandwich and cut in half diagonally.

Use non-dairy cream cheese for a vegan sandwich.
