Neutral: Sliced Avocado and Tomato Salad

Sliced avocado tomato saladThis is a simple and delicious salad made from simple ingredients–with an added benefit: Avocado in your meal helps you utilize all of the vitamins of your food as the oils in avocado make it easier for the body to absorb vitamins A, K, D, and E. It thus makes a perfect starter for dinner parties. As a main dish, combine it with other foods of the neutral food group, or combine it with either proteins or carbohydrates.

Serves: 4
10 minutes

4 ripe tomatoes, sliced
2 ripe avocados, peeled, pitted, and sliced
¼ cup extra-virgin olive oil
Juice of ½ fresh lemon
Freshly ground pepper

How to:

  1. In a small bowl, whisk together olive oil and lemon juice. Season to taste with salt and pepper.
  2. On 4 individual plates, arrange alternately the slices of avocado and tomato.
  3. Drizzle with the dressing and serve immediately.
