This crumble makes a simple and delicious dessert. Choose ripe mangos for sweetness and aroma. Mangos belong to the protein food group and can therefore not be combined with carbohydrates such as honey or agave syrup.
Time: about 45 min. (including baking time)
6 ripe mangos, peeled, pitted, and sliced
1 tablespoon fresh lemon juice
¼ cup vegetable oil
1 ¾ cup almond flour
1 pinch of salt
- Combine mangos and lemon juice in a bowl. Stir until mangos are coated with lemon juice. Evenly distribute mangos in the pie dish.
- In another bowl combine almond flour and salt.
- Add oil and mix by hand until crumbly. If the crumbles are too moist add a bit more almond flour.
- Cover the mangos with the crumbles and bake in preheated oven uncovered at 350º F for about 15 minutes, or until topping is slightly brown. Cover with aluminum foil and bake for another 15 minutes.
