Protein: Pineapple Smoothie

pineapple smoothieBring the tropics to your breakfast table! This smoothy can also be a healthy and refreshing breakfast to-go. The chia seeds are a great source of Omega-3 fatty acids.

Serves: 1
about 5 minutes

1 cup coconut milk, unsweetened
2 cups ripe pineapple
1 tablespoon chia seeds
Garnish: 2 sprigs of mint

How to:
Place coconut milk, chia seeds, and pineapple in a blender and blend until smooth. Add more coconut milk if you like to thin your smoothie. Serve over little ice or as is. Garnish with mint.
