1 cup coconut milk, unsweetened
2 cups ripe pineapple
1 tablespoon chia seeds
Garnish: 2 sprigs of mint
Place coconut milk, chia seeds, and pineapple in a blender and blend until smooth. Add more coconut milk if you like to thin your smoothie. Serve over little ice or as is. Garnish with mint.
