Protein: Leek Soup with Ground Beef

A simple but very tasty soup.

Serves: 4
about 20 minutes

1 lb ground beef
3 leeks, the light parts washed and sliced (1/4”)
200 g cream cheese
4 cups vegetable broth
1 pinch ground nutmeg
1 pinch cayenne pepper
1 TSP curcuma
1 TBSP olive oil

How to:
1. In a heavy saucepan heat olive oil over medium high heat. Add ground beef and sauté while constantly stirring until done (ground beef should be crumbly).

2. Add broth and leeks, cover, and simmer for 10 –15 minutes.

3. Add cream cheese and stir well.

4. Season to taste with nutmeg, cayenne pepper and curcuma.
