Time: about 20 minutes
11 oz arugula, cleaned and dried
2 ripe avocados, peeled, pitted and sliced
1 lb shrimp, cooked, peeled and deveined
2 tablespoons olive oil
¼ cup fresh lemon juice
salt and pepper to taste
1. For the dressing: In a medium mixing bowl whisk together olive oil, lemon juice, salt and pepper.
2. Divide the salad evenly among 4 salad plates.
3. Top each evenly with avocado pieces and shrimp.
4. Pour ¼ of the dressing on each salad.
